HEALTH: Early Morning Madness

Dazzling rays of sunshine stream through your window. From somewhere within the depths of a vivid dream, the ringing of your alarm clock jolts you to reality. Another morning unfolds, and you’re quite sure it will be much like the rest; a hectic mess that leaves you with no time for breakfast. STOP! You may be in a rush, but skipping breakfast won’t help the rest of your day go smoother. In fact, studies have shown that eating a balanced breakfast helps improve your mood and energy level, as well as maintain a healthy weight.

Despite the morning hurry, take some time to have breakfast. Not a cereal and milk person? Here is a tasty recipe from Black Hills Health & Education Center, an OCI ministry in South Dakota. You can even make the crepes ahead of time and just heat them up. Enjoy!

Fruit Filled Crepes

2¼ cups water
¾ cup raw cashews
1½ cups whole grain flour
2 Tbsp. honey
½ tsp. salt
1. Place all ingredients in blender and blend well. Mix should be thin.
2. Add more water if needed.
3. Cook on non-stick griddle at 400 F degrees until lightly brown and turn over.
4. Do not over cook until crispy or they will not roll.
5. Pour about 2 Tbsp. fruit sauce in the middle and roll up.
6. Place in pan seam side down.
7. When all are rolled, pour a little sauce down the middle of the crepes and serve.
Crepes freeze nicely.
Makes about 16 crepes (8 servings)

NEWS: Brazil Mission Trip

NEWS: In the Loop, Here’s the Scoop

Here are a few updates from OCI ministries around the world.

Country Life Prague: Twenty-five students participated in a recent LIGHT course at the ministry. Students presented a health expo with around 100 visitors in attendance. Because of this outreach,  about 14 people continue coming to the ministry’s health clubs and for Bible studies. In Prague, the ministry conducts regular health evangelism lectures (health club). Many individuals also accept the invitation to attend Sabbath programs in Country Life’s community center. Country Life’s team praises God for the health ministry and the opportunity to witness, and asks for prayers for this year’s medical missionary course.

Eden Valley Institute: The ministry asks for prayers as they advance a proposal to build several homes and a new lifestyle center. Maranatha Volunteers International will be going to the ministry in June to work on Phase I. Additional prayers are needed to raise the funds to cover the rest of the building expenses.

Cross to Crown International: Funds are needed for the remodeling of a local church. CCI is still interested in hosting a mission trip (group of individuals) to help with the remodeling. Additionally, the ministry is seeking a dedicated individual to help run the mission.

Peru Projects: Despite recent rumors of locals threatening to take control of a piece of undeveloped land on the project’s property, so far nothing has come of the reports. Chris Borcherding, director of the local team at Peru Projects,  says God answered many prayers for intervention. The team is cleaning up the area as quickly as possible to show that while the property isn’t currently in use, that it is being maintained. In the future, there are plans to extend the airbase’s runway on this particular piece of property. The team firmly believes that God has the situation under His control, but future invasion attempts are still a possibility. The ministry asks for continued prayer.
